The Best Marinated Chicken Spiedie Recipe

Use your grill to its fullest with these marinated Chicken Spiedies: herb-infused chicken pieces in toasty Italian buns with a delicious homemade garlic sauce.   

– 3 large chicken breast – 4 Italian roll – 2 tablespoons butter – ¼ cup olive oil – ¼ cup lemon juice – ¼ cup fresh cilantro  – ¼ cup fresh parsley  – salt and pepper to taste – 1 cup vegetable oil – ⅓ cup lemon juice – 6 cloves garlic – 1 egg white – 1 teaspoon salt


Blend all items in a blender for 1–2 minutes. This recipe yields 1½ cups of sauce; refrigerate leftovers.  


Mix marinade ingredients in a small basin. Fill a ziploc bag with chicken, marinade, and seal. Toss to blend.   


Refrigerate 2 hours to overnight. Heat your grill to medium-high before cooking. Clean and oil grill.


Brush butter generously inside the buns after cutting them lengthwise. Make sure to evenly distribute the chicken on four skewers.  


Grill the chicken for 3 minutes per side until done and browned. Grill the rolls for 2 minutes until the bread browns.  


Each roll has grilled skewers. Gripping the roll at the bottom, carefully slide skewer off, leaving meat in bread. Be liberal with garlic sauce.
